For centuries, pastoralism was an essential pillar on the island, especially in the peaks, life was built around livestock. Today, this ancestral practice survives thanks to the effort of people like Ismael García, reinventing tradition. His project, the Taiguy Cheese Factory, was born from the ability to continue making cheese during transhumance.
