Guided tour “The Cheese House: Transhumance, craft and gastronomic heritage” by Patrimonio Vivo, in Gáldar, Gran Canaria.
Transhumance draws a journey between mountains and plains, following the natural cycles of climate and pastures. Before receiving its name, shepherds simply spoke of the vital need to “move the livestock,” a seasonal task that today is recognized as a cultural heritage to be preserved.
In a rural environment where time flows at a different pace, the shepherd's craft and the artisanal production of cheese are preserved, a food that holds within itself history, necessity, identity, and territory. In Santa María de Guía, the Casa del Queso stands as the custodian of the heritage of this tradition turned craft that today enjoys well-deserved recognition.
From the Casa del Queso, one ascends to the viewpoint, from which one can see not only the landscape that feeds the flock, but also the craft and tradition passed down from generation to generation. Cheese and transhumance, intimately linked through the land and the care of livestock, are thus shown to us as tangible values of an intangible heritage, of our tradition, and of a way of living and surviving in harmony with a nature that imposes its laws.

Approximate duration: 120 minutes.
Difficulty: Medium-high. The museum tour is done without any difficulty. However, to access the viewpoint, a small ascent along a natural mountain path is necessary. Although the path is short (approximately 8–10 minutes), it may present some risk of slips or trips due to the unevenness of the terrain.
