Talk — Professional training in hospitality and tourism // 4th edition of the III Forum on Culture, Gastronomy and Cinema in the Lecture Hall. Obelisco Campus, Las Palmas de Gran Canaria.

Purpose: Cinema as an educational, cultural, and informative tool discovers another way for us to become cultured and communicate about areas of great interest to citizens such as Gastronomy and Health.

Main objectives:
a) Learn about Gastronomy, Health and Cinema, through watching films, short films and documentaries from the five continents.
b) Dialogue forum between experts in these subjects and the public.
c) Raise awareness of the importance of these arts in Health (physical, mental and social).
d) Generate a cultural debate on these topics in the University Community and in Society.

Organization of the fourth edition:
Host: Dr. Belén Alonso Ortiz. Doctor of Medicine from ULPGC. Associate Professor at ULPGC, assigned to the Dept. of Medical and Surgical Sciences. Professionally works as an Attending Physician in the Internal Medicine Service of the H.U. of Gran Canaria Doctor Negrín, Tutor of Internal Medicine Residents. Cinephile and gastronome.

Guest expert: Alex Santana is executive chef and gastronomic director at La Bodega de la Avenida and El Ronqueo (Las Palmas de Gran Canaria), where he leads high-volume restaurant projects integrating kitchen, front-of-house, and management with an approach focused on product quality, efficiency, and customer experience. Trained in restaurant management, cooking, and pastry at IES San Cristóbal, he complements his profile with continuous training in kitchen management. He has a solid track record in team leadership and the development of gastronomic concepts, as well as a notable involvement in vocational training, accumulating over 2,000 hours as a tutor. He has been recognized by the Repsol Guide (Solete), has participated as a speaker at Madrid Fusión, and collaborates as a brand ambassador and culinary advisor. His vision advocates for vocational training that is more connected to the reality of the sector, demanding, and aligned with the current needs of the restaurant industry.

Moderators: Ms. Ana Luisa Álvarez Falcón. Director of the ULPGC GastroFood HUB. Dietitian-nutritionist with a lifetime of experience at the Dr. Negrín University Hospital. Associate researcher at ULPGC. / Dr. José Antonio González. Doctor in Biological Sciences. He is a marine and fisheries biologist. Honorary Professor at ULPGC, where he works as a researcher, lecturer, and cultural promoter. Director of the Science & Gastronomy Cultural Classroom – ULPGC.

Format: The complete session will have a maximum duration of approximately 2 hours. It will begin with the presentation of the guest speaker and will include a cultural debate focused on the edition's theme. The Forum will nod to the film Boiling Point (2021), a way to show what this profession is really like and why Vocational Training holds so much weight in it.
